How to make French toast with sticky berry sauce

Melbourne has the most fabulous markets and one of my favourites is Prahran.  I don’t get there as often as I’d like so I was lucky enough to get a delivery from the team there of some fresh seasonal produce this week.

My delivery included the most beautifully coloured blueberries and blackberries. Plump and shiny these little gems leave the supermarket versions for dead. I decided to use the berries to make a decadent breakfast of French toast with a sticky berry sauce.

French toast with sticky berry sauce

If had some sourdough already so I just used that for my French toast but using Brioche or a similar sweet bread will make this breakfast even more indulgent.

Soaking the bread before frying

3 eggs
200ml milk
8 slices of thick bread (brioche or sourdough)
1 tbsp butter
For berry sauce:
100g blackberries
100g blueberries
60g caster sugar
1 tbsp lemon sugar
1 tbsp shredded coconut to top

1. Whisk the egg and milk in a bowl.
2. Place the bread on a shallow dish or plate and pour the egg and milk mixture over the top. Allow it to soak in for a minute and then turn the bread over and soak the other side.
3. Heat a non stick pan over a medium heat and melt the butter. Add bread to the pan and fry for one minute or until it starts to brown. Turn and cook the other side.
For berry sauce:
4. Put half the berries in a blender with the sugar and lemon juice. Blend until smooth. Pour over French Toast and top with remaining berries and flakes of coconut.
