Cheats chocolate mousse

For times when you have a chocolate craving this chocolate mousse is one of the best ways to satisfy it. Incredibly rich and silken it is also very simple to make thanks to the “cheat” ingredient of marshmallows. I like to serve the chocolate mousse in a jumbled assortment of old bone china teacups for a slightly quirky presentation, however ramekins or any small dish would be fine.

150g marshmallows
50g butter
250g chocolate (70% cocoa solids)
60ml hot water
284ml double cream
1 teaspoon vanilla extract


1. Combine marshmallows, butter, chocolate and water in a saucepan.

2. Put the saucepan on low heat and melt contents stirring occasionally. Remove from heat once melted.

3. Meanwhile, whip the cream with vanilla extract until thick and then fold into the chocolate mixture until combined fully.

4. Pour into 4 teacups and chill until ready to eat.

  2. Oooh I have been thinking about making this recipe for some time. (I never get around to cooking any Nigella recipes.) Is there a reason you used regular hot water instead of hot tonic water?
